Recommended: Cheese Bagel
The classic Kiwi fry-up, bagel-style. Bacon, egg, hash brown, and a good dollop of tomato relish stacked between a toasted bagel.
What You'll Need
- 1 Bagel Off Cheese bagel
- 2 rashers streaky bacon
- 1 free-range egg
- 1 hash brown (store-bought or homemade)
- 1 tbsp tomato relish (or Watties tomato sauce, no judgement)
- Handful of baby spinach
- Butter, for the pan
Method
1. Fry the bacon until crispy, then set aside on paper towel.
2. Cook the hash brown in a little butter until golden on both sides.
3. Fry the egg to your liking.
4. Slice your bagel in half and toast or air fry for 5 mins or until golden and slightly crisp on the cut side.
5. Spread relish on the bottom half, layer spinach, hash brown, bacon, then egg.
6. Press the top half on, cut in half, and get amongst it.
Tips:
Cook the egg last so it stays warm and the yolk is still runny when you stack — nobody wants a cold fried egg. Toasting the cut side down in a dry pan rather than a toaster gives you a better crust to hold all that filling. If your hash brown is frozen, cook it first and keep it warm in a low oven while you sort the rest.
